Eggless Whole-wheat chocolate chip cookies

Ingredients:

  • 1 cup Whole Wheat Flour
  • 5 tbsp. instant oats
  • 3 tbsp. flax-seed powder
  • ½ cup unsalted butter (1 stick) (softened at room temperature)
  • ¼ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 tbsp. coconut oil (or any other oil)
  • 2 tbsp. water
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1 cup semi-sweet chocolate chips

Method:

  1. Preheat the oven at 350 F (180 degree Celsius).
  2. Mix Whole wheat flour, instant oats, flax-seed powder and baking soda in a bowl.
  3. In another bowl, beat together butter and sugars till they are of creamy consistency.
  4. Add flour mixture into butter mixture and mix with spatula.
  5. Add vanilla extract, water and coconut oil and mix further.
  6. Finally fold-in chocolate chips and make balls equivalent to 1-2 tbsp. each (depending on size preference)
  7. Place the balls on cookie sheet and bake for 12-14 minutes.
  8. Remove from oven and allow them to cool.

Thalipith

Ingredients:

  • 4 tbsp wheat flour
  • 4 tbsp gram flour
  • 4 tbsp jowari flour
  • 1 tbsp oil
  • 1 bowl chopped fenugreek leaves
  • 1 onion – finely chopped
  • 1 green chili – finely chopped
  • ½ tsp turmeric powder
  • Salt to taste

Method:

  • Mix all the above ingredients in a bowl and knead dough with a little water.

  • Make thick chapattis from this dough and shallow fry on a tawa, using a little oil.
  • Serve hot with butter and yogurt/ketchup.

Quick Bread Pizza

Ingredients: 

  • 4-5 bread slices
  • 1-2 slices of cheese
  • 1 cheese cube (grated)
  • Butter as required

 For topping mixture: 

  • Half capsicum – finely chopped
  • 1 small tomato – finely chopped
  • ½ cup corn kernel – boiled
  • ½ tsp pepper powder
  • ½ tsp oregano
  • ¼ tsp chilli flakes
  • Salt to taste 

Method:

  1. Cut the bread slices into round or any other different shapes you like.
  2. In a bowl mix all the ingredients for topping and stir properly.
  3. Spread butter on both the sides of the bread slice. Place the cheese slice on that & and above that, place the prepared topping mixture. Finally sprinkle some grated cheese & pepper powder on top.
  4. Place the prepared slices on baking tray & bake it in a preheated oven for 10 mins on 200°C.
  5. Serve with any mocktails.

Healthy Pasta and Fruit Salad

Ingredients:

  • 1 bowl Conchiglie whole wheat pasta (boiled) (even maccheroni can be used)
  • 1 carrot – finely chopped
  • 1 capsicum – finely chopped
  • 2-3 baby corn – chopped
  • ½ cup sweet corn kernels
  • ½ apple – peeled and chopped
  • ½ cup grapes
  • 3-4 cloves of garlic (in a paste)
  • ½ tsp pepper powder
  • Juice of 1 lemon
  • 1 tsp oregano/mixed herbs
  • 3-4 tsp olive oil
  • Salt to taste

Method:

1. In a microwave safe bowl, add carrot, capsicum, baby corn and sweet corn and microwave it with a little water for 2 min with lid.

2. Now in another microwave safe bowl, add oil, garlic, pepper powder and herbs and microwave it for 40 seconds. Add boiled vegetables and all the other ingredients to it. Mix well.
3. Microwave it again for 30 seconds.

Healthy Sprout tikkis

Ingredients:

  • 1 bowl boiled mixed sprouts
  • 2 tbsp grated tofu/paneer (Optional)
  • 1 tbsp ginger-chilli paste
  • ½ tsp pepper powder
  • 2-3 tbsp brown toast crumbs
  • 2 tbsp chopped coriander leaves
  • ½ tsp garam masala
  • Pinch of turmeric powder
  • Salt to taste

Method:

  1. Crush the sprouts in a mixer roughly.
  2. In a bowl, add all the other ingredients in crushed sprouts.
  3. Mix well and make the dough for the tikkis. (If needed, you can add a little water)
  4. Make round-flat tikkis and shallow fry it using very little oil on low to medium heat till golden brown.
  5. Sprinkle chaat masala on the tikkis.
  6. Serve with green chutney or masala curd.

Crispy Bread Tikkis

Ingredients:

  • ½ cup Rawa (Soji)
  • 1 green chilli finely chopped
  • 2 cubes grated cheese
  • ¼ tsp pepper powder
  • 1 tbsp coriander leaves
  • ¾ tsp baking powder
  • 6-7 Wheat bread slices
  • Salt to taste

Method:

  1. Except bread, mix all the other ingredients in rawa. Prepare the paste adding little water if needed.
  2. Cut the bread slices into round using small bowl. Spread the prepared paste on all the bread slices on one side.
  3. Shallow fry it with some oil or ghee on low to medium flame till golden brown. (It can also be deep fried in oil or baked in oven)
  4. Garnish with Tomato Ketchup & some sesame seeds.

Fada (Wheat Dalia) Upma

Ingredients:

  • 1 cup fada (wheat dalia – small sized)
  • 1 dry red chilli (cut into pieces)
  • 1 green chilli
  • 3 cups warm water
  • 2 tbsp curd
  • 1½ tbsp oil
  • ½ tsp mustard seeds
  • 1-2 tbsp soaked Urad dal (Soaked chana dal can be used)
  • 5-6 curry leaves
  • 2-3 pinch of turmeric powder
  • Salt to taste

Method:

  1. Heat oil in a pan and add mustard seeds and dalia. Fry for sometime till it gets light pink. Then add chillies, curry leaves and urad dal; sauté for 2 mins.
  2. Now add water, curd, salt and turmeric powder, let it cook with lid for sometime till the dalia cooked properly. Let it sauté for sometime till water gets absorbed properly.
  3. It can be served with buttermilk.
  4. You can add boiled vegetables like carrot, peas, etc.

Khaman/Dhokla (In Microwave)

Ingredients:

For batter:

  • 1½ cup gram flour (besan)
  • 1 cup water
  • 1 tsp sugar
  • 1 tsp baking soda or fruit salt
  • 1 tsp lemon juice
  • 1 tsp oil
  • Salt to taste

For tempering:

  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 1 green chili – chopped
  • 2 tbsp grated coconut (optional)
  • 1 tbsp coriander leaves
  • 1 tbsp oil
  • ½ cup water
  • ¾ tsp sugar
  • ½ tsp lemon juice

Method:

  1. In a bowl, mix all the ingredients for batter properly.
  2. Pour the batter in a greased microwave safe flat-surface container.
  3. Microwave it for 4 minutes on high power. Allow it to stand for 3 min. Then, cut the dhoklas into equal pieces.
  4. Separately, mix lemon juice and sugar in water and keep it till the sugar dissolves.
  5. Heat oil and add mustard seeds, green chili, sesame seeds. When it starts spluttering, add the sugared water.
  6. Pour the above mixture on the prepared dhoklas. Leave it aside for 5 min.
  7. Sprinkle coconut and coriander leaves on top.

Healthy Veg. Burger

Ingredients:

For patties:

  • 2 boiled and mashed potatoes
  • 1 cup boiled mixed vegetables (carrots, beans, peas, etc.)
  • 2 tbsp coriander leaves
  • 1-2 chopped green chillies
  • ½ tsp garam masala
  • 1½ tbsp corn flour
  • Salt to taste

For burger:

  • 2 Burger bun
  • Tofu – 2 slices
  • Mayonnaise
  • Cheese spread
  • Mustard sauce
  • ½ capsicum – sliced
  • ½ carrot – grated
  • Bread crumps
  • Oregano & Chilli flakes (optional)
  • Olives & jalapeños (optional)

Method:

  • Mix well all the ingredients for patties in a bowl.

  • Make two burger-sized patties from the mixture, roll them in the bread crumps and shallow fry till golden brown.

  • Cut the burger bun into two and apply cheese spread and mustard sauce inside both the slides. Place the patties on the lower slice.

  • Spread the mayonnaise, place the tofu slice and all other ingredients over it.

  • Sprinkle oregano and chilli flakes.
  • Microwave for 1 min.

Cheese Palak Idli

Ingredients:

  • 500 gms Idli Batter
  • 1 bwl Fried palak ( Washed the chopped palak properly, Let it dry for 1 hr on clean cotton cloth then dip fry it in oil)
  • 2 cubes grated cheese
  • 1-2 tsp Pepper powder
  • 1 tsp sambhar powder
  • Salt to taste

Method:

1. In a bowl mix fried palak, pepper powder, cheese & salt together.

2. Spread Idli batter in the Idli stand, place some palak mixture on it & again pour batter on that.

3. Sprinkle some grated cheese or Sambhar powder on top. Let it cook for 10 mins.

4. Serve hot Idli with coconut chutney.
