Eggless Chocolate-Walnut cake (in microwave)

Ingredients:
1¾ cup maida (plain flour)
6 tbsp cocoa powder
¼ tsp baking powder
½ tsp eating soda
¾ cup vegetable oil / refined oil
1 cup curd (nor sour)
1¼ cup ground sugar
½ tsp vanilla essence
1 cup milk with 1 tsp coffee and 2 tsp drinking chocolate mixed in it
½ cup walnuts pieces

Ingredients:

  • 1¾ cup maida (plain flour)

  • 1¼ cup ground sugar
  • ½ tsp vanilla essence
  • 1 cup milk with 1 tsp coffee and 2 tsp drinking chocolate mixed in it
  • ½ cup walnuts pieces
Method:
  1. Sieve the dry ingredients viz. maida, cocoa powder, baking powder and soda for 2-3 times.
  2. In a deep bowl, mix oil, curd, sugar and vanilla essence. Beat well with beater. Then add flour mixture and mix properly.
  3. Now add the coffee-chocolate milk and beat again well.
  4. Ensure that the mixture has a loose consistency.
  5. Add walnut pieces and mix them gently.
  6. Grease a round or square microwave-proof vessel. Pour the mixture in it and pour some walnut pieces on top.
  7. Microwave this for 10 minutes on high power. Standing time 10 minutes.
  8. Allow it to cool completely before unmolding it.

    Hi, this recipe is very good… But the cake breaks when preparing… Can you please tell me how to avoid that???

    I had made it with 900W power on microwave for 10 min. So if the highest power in your microwave is more than that, you can try it for 8-9 min…
    Moreover, you can add a little extra milk to increase the moisture.. so that the ‘cracks’ on the cake surface can be avoided…

    @ Gunjan : Nice to hear that you liked the cake.. in case you want it less chocolaty, you can avoid adding drinking chocolate in milk. you can also try reducing cocoa powder..

    I made this cake yesterday ! omitted putting coffee and chocolate in the milk still it came out so so yum and my sour curd was used up too. Very nice recipe indeed…..Thanks

    @anubha: you can divide ingredients by half… take a smaller square container.. and microwave for about 8.5 minutes + 10 minutes standing time.

    @Neha: Using the ingredients in the above proportion should ideally give a spongy texture.. however if it’s not working, try putting slightly extra eating soda + allow it to stand for some more time…

    can i replace ground sugar by icing sugar , if yes then what qty of it will be required for the above recipe.

    @canna: Sorry for replying late… yes, for standing time mentioned, you need to retain the container in microwave itself with door closed (and microwave off)…

    @genelia: yes, round glass bowl should also be fine, as long as it has a flat base…

    and for the other question, you cannot use icing sugar as a replacement… you can use caster sugar though..

    Thanks a lot…
    For easy icing u can use readymade icings like pillsbury vanilla and chocolate icing etc… or whipped cream with walnut, gems or jelly on top..

    Thanks for this recipie Ishani… Its very easy and so far the best i have tried!! The cake came out very well. It was so soft and yummy:) Though i skipped adding drinking chocolate and put more baking powder in place of baking soda.. Also added a little more of milk. Congrats… Next time i will try icing also.
