Appy punch

Ingredients:

  • 3 apples
  • 1 inch ginger – chopped
  • 3 tbs honey
  • 1 lemon

Method:

  1. Peel and chop the apples.
  2. Grind chopped apples and ginger together in a mixer.
  3. Add honey and lemon and mix well.
  4. You can add ice-cubes, if needed.
  5. Pour some honey on the top making a circle.
  6. Garnish the glass with a lemon slice or mint leaves.

Walnut cookies

Ingredients:

  • 1 cup of plain flour
  • ½ tsp of baking powder
  • ½ cup of ground sugar
  • ½ cup of butter
  • ¾ cup of crushed walnuts
  • 10-12 walnut quarters
  • 3-4 drops of vanilla essence
  • 2-3 Pinches of salt

Method:

  1. Beat butter and sugar till light.
  2. Sieve baking powder, salt and flour together.
  3. Add the flour & essence to the better and mix well.
  4. Add crushed walnuts and make small flattish round cookies.
  5. Press walnut quarters on top of the cookies.
  6. Place some cookies in baking tray far apart enough to allow the cookies to expand.
  7. Bake the cookies in preheated oven at 180 °C for 15-20 minutes or till it become light brown. Remove them from the oven & Allow it to cool.
  8. Store in air-tight container.

Eggless Orange cake

Ingredients:

75 grams butter
½ cup sugar
1½ cup flour
1½ tsp baking powder
¾th cup orange juice
1 tsp orange zest (optional)
½ cup milkmaid
¼th cup of milk

Method:

  1. Mix butter and sugar in a bowl with a spoon. Then beat the mixture till it becomes fluffy.
  2. Add milkmaid to the batter.
  3. Add flour, baking powder, orange juice and milk.
  4. Mix it all together into a smooth batter.
  5. Pour the mixture in a greased tray and bake it in a preheated oven for 40 minutes at 180°C.

Stir fry vegetables with rice

Ingredients:

  • 1 cup rice
  • 1 carrot (diced)
  • 1 green capsicum (diced)
  • 1 red capsicum (diced)
  • 1 yellow capsicum (diced)
  • 10-12 florets of broccoli / cauliflower
  • 1 zucchini (diced) 
  • ½ bunch of spinach (whole leaves)
  • ½ bowl french beans (chopped)
  • 2 tbsp butter
  • 1-2 tbsp olive oil
  • 1½ tbsp finely chopped garlic
  • 1 green chilly (finely chopped)
  • 2 tsp pepper powder
  • 1 tsp mixed herbs
  • 1 tsp oregano
  • ½ tsp chilly flakes 
  • 1 tsp vinegar
  • Salt to taste

Method:

  1. Cook rice, adding some salt. Heat 1½ tbsp butter in a pan, add the cooked rice and 1 tsp pepper powder and stir fry for 1-2 minutes. Keep it aside in the serving plate.
  2. Heat the remaining butter in a pan. Add olive oil, garlic and green chilies and stir fry for some time.
  3. Add vegetables one by one, starting with those which take more to cook.
  4. Stir fry vegetables on high to medium flame, about 10 minutes or till it gets half cooked.
  5. Add pepper, all herbs, chilly flakes, salt and vinegar.
  6. Mix well and stir fry for some more time. Place it on the rice and serve hot.

Hot & Spicy Pasta

Ingredients:

  • 1 cup boiled spaghetti and fussili
  • 2 onions, finely chopped
  • 1 large tomato, finely chopped
  • 4-5 garlic cloves
  • 1-2 tsp chilly-ginger paste
  • 1 tsp red chilly powder
  • Pinch of turmeric powder
  • ½ tbsp corn flour (mixed with some water)
  • ½ tsp chilly flakes
  • 1 tsp sugar
  • ½ tsp pepper powder
  • 1 tsp mixed herbs
  • 1 tsp oregano
  • Salt to taste
  • 2 tbsp tomato ketchup
  • 1 tbsp butter/ghee
  • 2 cheese cubes
  • Other boiled vegetables like capsicum and French beans (optional)

Method:

  1. In a microwave safe bowl, microwave butter for 30 seconds. Add onions, garlic and chilly-ginger paste and microwave it for 3 minutes on high power.
  2. Add tomato and microwave it for 2 minutes.
  3. Add corn flour liquid, some water, sugar and all the spices and herbs mentioned above. Microwave it for 3 more minutes.
  4. Add pasta, vegetables and tomato ketchup, mixing them well and microwave it further for 1 minute.
  5. Add grated cheese on the top and bake it in a pre-heated oven (on convection mode) at 200°C for 6-7 minutes.
  6. Serve it hot, accompanying it with fruit juice or beverages.

Methi pakoras

Methi pakoras

Ingredients:

  • 1 bunch Fenugreek (chopped and washed properly)
  • 1 cup gram flour
  • 3-4 tbsp wheat flour (non-finely grounded)  (Lapsi dalia)
  • 1 tbsp soji rawa
  • 3 green chillies (paste)
  • 1” ginger paste
  • ½ tsp eating soda
  • 1 tsp red chilli powder
  • Pinch of turmeric powder
  • 1.5 tsp coriander-cumin powder
  • 3-4 tsp sugar
  • Salt to taste

Method:

  1. In a bowl, mix all the above ingredients (except soda) and a little to water to make consistent dough for pakodas.
  2. Keep it aside for 30 minutes.
  3. Add eating soda and 1tbsp hot oil to the dough and mix properly.
  4. Make pakoras from the dough and deep-fry them.

Sandwich pakoras

Ingredients:

  • 1 sliced potato
  • 1 cup garlic coconut chutney
  • 1 cup batter of methi pakoras (as mentioned above)

Method:

  1. Spread garlic-coconut chutney between two potato slices. (Prepare such pairs from all the slices)
  2. Dip the pair into the dough of methi pakora, handling it carefully and deepfry them till golden brown.
  3. Cut the sandwich pakoras into two before serving.

Onion pakoras

Ingredients:

  • 1 sliced onion
  • 1-2 tbsp gram flour
  • ½ cup fenugreek leaves
  • ½ tsp red chilli powder
  • ½ tsp sugar
  • Salt to taste

Method:

  1. Mix all the ingredients and keep aside for 15-20 minutes.
  2. Deep fry the pakoras.

Rajma Salad

This recipe makes a great breakfast as well as diet lunch..

Ingredients:

  • 1 cup boiled rajma (kidney beans)
  • 1 chopped capsicum
  • 7-8 chopped & boiled french beans
  • ¼ cup boiled peanuts
  • 1 chopped & boiled beetroot
  • ½ tsp mixed herbs (or oregano)
  • ½ tsp chili flakes
  • ¼ tsp red chili powder
  • 1 tsp pepper powder
  • Coriander leaves
  • 2 tsp cooking oil
  • Salt to taste

Method:

  1. Heat the oil in a pan, add capsicum and fry for some time.
  2. Then add other vegetables, peanuts & rajma and sauté for 2 minutes.
  3. Add all the other ingredients and mix well.
