Orange-Grapes Drink

Ingredients:

  • Juice of 3 oranges
  • 1 bowl black grapes
  • 1 tsp cumin powder
  • 6-8 mint leaves
  • 1 tbsp honey
  • ¼ cup water

Method:

  • Grind grapes, ½ tsp cumin powder, honey, mint leaves and water together in a mixer. Filter the juice.

  • Mix orange juice with ½ tsp cumin powder.
  • Fill up half a glass with grape juice and ice-cubes.
  • Pour the orange juice too in the glass with the help of an inverted spoon. (Note: This is to make sure that both the juices don’t get mixed immediately)

  •  Serve chilled with some mint leaves on the glass.

Tofu Bhurji

Ingredients:

  • 100 gm Tofu (grated)
  • 2 onions (chopped & boiled)
  • 3 tomatoes
  • 5-6 cloves garlic
  • 1″ Ginger
  • 3 whole dry red chillies (Soaked in hot water for 15 min)
  • 2 tbsp cashew nuts & almond paste (Soak in hot water for 15 mins, peel and make a smooth paste)
  • 1 tsp red chilli powder
  • 1 tsp coriander-cumin powder
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • ¼ tsp cardamom powder
  • 1 tsp sugar
  • 1 tbsp kasuri methi
  • 1 tbsp coriander leaves
  • 1-2 tbsp oil
  • Salt to taste

Method:

  1. Cut the tomatoes into half, put it in a microwave safe bowl and cook for 2 min on high power. Let it cool, peel them & make a puree.
  2. Mix boiled onions, soaked red chillies, garlic and ginger in a mixer cup & grind them into a smooth paste.
  3. In a large microwave safe bowl mix oil & onion paste & microwave it for 3 mins.
  4. Add Tomato puree & microwave it for 3-4 mins. Then add all the dry masala, sugar, salt & cashew-almond paste. Again microwave it for 2 mins. Water can be added if needed.
  5. At last mix grated tofu & coriander leaves properly. Microwave it for 2-3 mins before serving.
  6. Serve hot with parathas or Rice.

Healthy Veg. Burger

Ingredients:

For patties:

  • 2 boiled and mashed potatoes
  • 1 cup boiled mixed vegetables (carrots, beans, peas, etc.)
  • 2 tbsp coriander leaves
  • 1-2 chopped green chillies
  • ½ tsp garam masala
  • 1½ tbsp corn flour
  • Salt to taste

For burger:

  • 2 Burger bun
  • Tofu – 2 slices
  • Mayonnaise
  • Cheese spread
  • Mustard sauce
  • ½ capsicum – sliced
  • ½ carrot – grated
  • Bread crumps
  • Oregano & Chilli flakes (optional)
  • Olives & jalapeños (optional)

Method:

  • Mix well all the ingredients for patties in a bowl.

  • Make two burger-sized patties from the mixture, roll them in the bread crumps and shallow fry till golden brown.

  • Cut the burger bun into two and apply cheese spread and mustard sauce inside both the slides. Place the patties on the lower slice.

  • Spread the mayonnaise, place the tofu slice and all other ingredients over it.

  • Sprinkle oregano and chilli flakes.
  • Microwave for 1 min.

Apple-berry Drink

Ingredients:

  • 1 large-sized apple (chopped)
  • 6-7 medium fresh strawberries (sliced)
  • 3 tbsp honey
  • 2 tbsp curd
  • 1¼ cup water
  • ½ tsp cinnamon powder

Method:

Mix all the ingredients in the mixer cup.

Blend it in a mixer.

Serve the drink with ice cubes & garnish with honey and small fresh strawberry on the glass.

Cheese Palak Idli

Ingredients:

  • 500 gms Idli Batter
  • 1 bwl Fried palak ( Washed the chopped palak properly, Let it dry for 1 hr on clean cotton cloth then dip fry it in oil)
  • 2 cubes grated cheese
  • 1-2 tsp Pepper powder
  • 1 tsp sambhar powder
  • Salt to taste

Method:

1. In a bowl mix fried palak, pepper powder, cheese & salt together.

2. Spread Idli batter in the Idli stand, place some palak mixture on it & again pour batter on that.

3. Sprinkle some grated cheese or Sambhar powder on top. Let it cook for 10 mins.

4. Serve hot Idli with coconut chutney.

Tortellini with Veg Cheese Dip

Ingredients:

For tortellini pasta:

  • ½ cup plain flour
  • ½ tsp pepper powder
  • ½ tsp mix herbs
  • Grated cheese
  • Salt to taste

For veg. cheese dip:

  • 1 cup Mix vegetables finely chopped & boiled (carrot, beans, peas, cauliflower, capsicum etc…)
  • 1 small onion sliced / spring onion
  • 2 tsp Ghee
  • 3-4 tbsp white sauce
  • 1 tbsp cream
  • Grated cheese
  • ½ tsp pepper powder
  • ½ tsp mix herbs
  • ½ tsp chilli flakes
  • ½ tsp oregano
  • 2-3 pinches of sugar (optional)
  • Salt to taste

Method:

1. In plain flour add salt, pepper powder, mix herbs and prepare dough.

Make thin roti from that dough & cut the small roties with bowl.

 2. Fill grated cheese in to that roties & make tortellini shape.

3. In the hot water boil it for sometime and then add it in cold water.

4. Heat ghee in a pan, add onion cook for sometime. Then add salt, pepper, chilli flakes, mix herbs, oregano, boiled vegetables and mix well.

Then add white sauce, sugar, grated cheese & cream & stir well. Let it cook for sometime.

Serve tortellini pasta with dip. 

Vegetable Tomato Rice

Ingredients:

  • 1 cup Rice
  • 3 big tomatoes
  • 1 bwl mix vegetables (half cooked – carrot, beans, cauliflower, peas etc..)
  • 1 tbsp oil
  • 2-3 dried red chillies
  • 1 tsp mustard seeds
  • 5-6 curry leaves
  • 1 sliced onion
  • 1 tsp red chilli powder
  • 1 tsp coriander-cumin powder
  • 1 tsp ginger-garlic paste
  • Salt to taste

Method:

  1. Soak rice for half an hour.
  2. Make two small slits at the top of the tomatoes. Heat water in the pan & boil it for sometime. Cool them in cold water. Peel & blend to make a puree. 
  3. Heat oil in a pan & add dried red chillies, mustard seeds and curry leaves. When they start spluttering add the onion, ginger-garlic paste & fry for sometime. Then add tomato puree, boiled vegetables, coriander-cumin powder, red chilli powder & sauté. Add water & salt.
  4. When it starts boiling add soaked & drained rice. Allow the rice to cook.
  5. Serve hot with dahi tadka or masala dahi.
